Then I larded it big time with lots of salt pork. Roasted it in large pan at 325 until the meat was falling off the bone. Had a bunch of farmers and an old trapper, who spent the war hiding out with the Cree, over for dinner. I had also put a big platter of grilled steaks on the table but didn't tell them the roast was beaver. The old trapper takes out his knife and cuts off a piece of the beaver meat. Its so tender it fall apart when he picks it up. After he tastes it, he says, "Where'd you get the beaver?" None of them ate any steak, but the beaver bones were picked clean. |
