Here in Massachusetts it's getting hard, if not illegal, to stalk and trap
beaver. All along the river banks there are downed trunks where beaver are
present. It's getting so's a feller can't go fishin' without steppin' on wood.

COUNTRY STYLE BEAVER

2-3 lbs beaver steaks 1/2 inch thick
Bacon grease
2 cups flour
1 tsp salt
1 tsp pepper
2 medium onions
1 can cream of mushroom soup
1 can or 1/2 lb mushrooms

Combine flour, salt and pepper in a closable bag or 2 quart closable
plastic container and shake until mixed. Add beaver and shake until
well coated. Save remaining flour. Dice onions. Melt enough bacon
grease in the bottom of a fry pan to saute onions and beaver. Saute
onions and floured beaver in bacon grease, adding more grease as
needed. Place beaver aside.

Combine soup and mushrooms in frying pan. Dissolve 2 to 3 heaping tbsp
of seasoned flour in 2 cups cold water. Add to soup mix and simmer 5
minutes. Add beaver and onions to mix and simmer covered for 30
minutes.

The old fur trappers felt beaver tail to be a delicacy. Having had this
once, it's greasy, and a lot of work for little meat.

More to the point, modern dress customs seem to confirm the old complaint by
Bridger, Sublette, and all the other trappers that "beaver is thinnin' out."

About 30 years ago when I lived up on the upper Ottawa River I fought
a war with a beaver to save my trees; the silly bugger had zillions of
hectares of land full of trees in Quebec across the river, but he
wanted mine. I ate his heart and roasted him.

First I soaked the whole haunch with loin attached in a salt and
vinegar marinade, in the fridge for about a week.

When I took it out, I fleshed off the layer of fat. Then I larded it
big time with lots of salt pork. Roasted it in large pan at 325 until
the meat was falling off the bone.

Had a bunch of farmers and an old trapper, who spent the war hiding
out with the Cree, over for dinner. I had also put a big platter of
grilled steaks on the table but didn't tell them the roast was beaver.
The old trapper takes out his knife and cuts off a piece of the beaver
meat. Its so tender it fall apart when he picks it up. After he tastes
it, he says, "Where'd you get the beaver?" None of them ate any steak,
but the beaver bones were picked clean.

trip.....catch the colors and some stream residents. Mid to late September
is a beautiful time along the south shore......fat brookies in breeding
plumage.....clubbing salmon.....northern lights.....no bugs. Whattaya
think?

Certainly too late for the ephemeral steelhead, but I'm not all that sure
I'd want to do that particular thing again anyway. I'm thinking a fall
trip.....catch the colors and some stream residents. Mid to late

September
is a beautiful time along the south shore......fat brookies in breeding
plumage.....clubbing salmon.....northern lights.....no bugs. Whattaya
think?

Rats. Wading Lake Superior without the bulwark that is Petah is possible, I
suppose, but not an experience to be savored......except, perhaps, in
retrospect as a daring, if somewhat foolhardy, exercise in bravado.

Any chance you could get away.....oh, say, NOW? :)
