Well, I really hate to do it......
 
I mean, I really DO hate to interrupt all this good fellowship and
harmony with yet another contentious issue, but......

Becky found a couple of recipes that she thought might me good for
supper tonight.

What the hell, sez I, whattya got in mind?

Pan seared and baked rainbow trout with a sauce made of tomatillos,
lemon juice, lemon zest, cinnamon, nutmeg, diced celery, sugar and a
bit of salt and pepper.....finished with a cup of fresh raspberries
just before serving. Awesome!

The side dish was quinoa, wild rice and basmati rice with diced red and
yellow bell peppers, chives, mushrooms and a bit of crushed red hot
peppers. Not quite as awesome and the trout, but damned fine.

A loaf of bread.....

A jug of wine.....

Hmm. Cinnamon, nutmeg, celery....

about twice as many ingredients as I'd ever have thought of
myself, but the last-second raspberries sound such a wonderful
idea I might have to give the whole shootin match a try some day.....

Sounds good.

Not quite as gourmet, however a few nights back we had rainbow prepared as
follows:

Give rainbow a milk bath
Coat fish in Italian bread crumbs
Fill belly with green chilies, fresh sweet onion, fresh garlic
Pan fry in olive oil till crispy on each side

Sauté remaining sweet onion in butter and garlic to cover cooked and
de-boned rainbow

One box of Uncle Ben's wild rice

French bread and a cold beer...

Made for an okay dinner,

Try to......but, after a jug of wine.....well, all the little letters and
stuff kinda swim around and they're hard to pin down. :(

Asian steamed fish.
In a wok add a little oil, some fresh ginger and garlic.
Sear the whole fish on both sides
Add some wine, white looks better in the end
add some scallions
cover and steam until done.

Both tasty and healthy.

Do you reduce the remaining liquid for a sauce?

Given the view I would have been late for dinner.


The pic was taken off my deck when I was cooking the fish, so I didn't have
