You're using an Irish ISP so, around most of your coastline, at this time of year, I'd suggest you begin by spinning - there should be pollack off most rock marks by now and bass around the estuaries. Float (bobber) fishing shallow (about a metre down) anywhere you can get into the tide should pick up some tasty garfish - and the odd mackerel but they won't be worth eating for a few weeks yet. My first reply wasn't far off the mark. For pier fishing I'd add a simple paternoster, fished straight down, to the list. First things first: How old is your son? Unless he's rising teenage you'll need to structure everything around his attention span, physique and temperament.
