New to the game, need to know what hook size I need for different fish eg
3/0 = bass/pollack ??
only fished from shore. Cheers

Work back from the bait.

If you are fishing (say) a prawn for bass you want a hook that presents the
bait without overwhelming it - the same hook would be far too small to
present a whole calamari squid. A Pollock chasing June fry might take a
lure on a #6 hook whilst the same fish hunting launce may come to an 8/0
redgill.

When baits get really large you can use pennel and other multi-hook rigs to
prevent the hooks getting too big.
