You'll get some good advice from a number of highly qualified folks
in this forum. What you call specimen fish we call trophy fish and
I suggest you plan to spend at least a week out of your 4-6 hunting
trophy smallmouth bass in Quetico Provincial Park, Canada. I think
it's some of the best "trophy fishing" available in North America.

You can hunt trophy brook trout in Labrador, trophy largemouth bass
in Florida and California. We don't appreciate the carp as much as
you guys do, (a shame really, it's a great fighting fish) so I'd
recommend you fish for other species while you're on this side of
the pond.
