They are not specifically carp, or any other kind of, fisheries. But many of them have their own lakes or are near to rivers etc.
Also, have a look in the angling press, Angling Times for instance, has adverts from French carp fisheries, though I don't know if they allow camping. I think most of them expect you to hire one of their cabins/static caravans.
