Op --does anyone know, if cat gut degrades fairly rapidly, and what's it
taste like?--

Can't say how fast it degrades uncooked. Cooked, it tastes rather like
chicken. Although, one species of gut tastes pretty much like another.

My personal experience is that dog is the better entre. The old fur
trappers reportedly enjoyed cougar even more than bison or elk.
