I have both, but I've always found it much more comfortable using my pedestal
vise, as it doesn't have to be positioned at the edge of the tying bench, so I
can easily rest my elbows on the bench surface when tying - something that
would be awkward if even possible with a c-clamp model. The pedestal model
also has no restriction on bench thickness as a c-clamp model may.

I tie for both fresh and salt, and have never felt the pedestal vise was
unstable, even when lashing 2/0 budgies with kevlar thread. But if I ever
found it to be a problem, it would be no big deal to clamp the pedestal base
to the bench with an inexpensive c-clamp...
