I have my troll motor mounted off center because I have a pointed bow.
Does turning the main motor a little one way help to keep it tracking
straighter?

It's all a matter of physics....drift, drag, and thrust. Since you
probably don't carry a slide rule with you on the water, and you don't
have a set of instruments, just "fly" it by the seat of your pants, like
pilots do when they lose their instruments.
Of course a rudder would help with the drift aspect, so using the main
motor as a rudder makes sense. you do increase the drag, but that's
offset by increasing the trust.
