From where you live, to drive to the other side of the Smokies, either on
the north our south or most eastern side of the park, you pass wonderful
trout streams all the way.
don't forget to leave the place cleaner than you found it, catch and release
and if you do do drugs, bring enough for everybody....

that I know of in NC is the streams on the Cherokee Indian Reservation.

Fishing in Missouri was the first time I went, and I had a ball. I go
