From a mapping point of view theres a piece of software called Matlab
http://www.mathworks.com/index.shtml that will produce a 3d charts.
(however its not a simple tool to use and if you buy it its expensive) if
you have not ethical problems you
could probably get it via kazaa or similar.

However for the effore involved in using it I'd stick with excel.
