Default mercury levels, catch n eat

Having returned to the US after many years abroad and located ourselves
in Atlanta (first time living in the South), we are hoping to start
freshwater fishing.
Have noticed warnings about mercury levels. What fish are affected?

There are all these "catch and release" fishing sites. Where can you
"catch n eat"?
