Anyone got any tips on how to attach balloons so they're easy to remove when
retrieving?

Try Half hitching a rubber band around the main line at the desire location.
Then with the remaining loop, form a half hitch, and slip the balloon end
through both loops, pull tight, and your fishing. Use smaller rubber bands,
size 14, thy pass onto reels, and through rings very easily.

Thanks I'll give that a go, I am usually fishing about 30' down so anything
that can be retrieved is an advantage.

Balloons are used to suspend large baits (whole mackerel just off the bottom
in my case) and can be a really exciting way of fishing.
