Just moved to the outer banks, NC. Not familiar with rockfish, but it seems to be a local favorite and are fun to catch. I've been throwing them back, but any suggestions on cooking them?
I still can't understand why Amberjack is still not a big hit on the east coast, unlike the Gulf. But, I still have Mahi Mahi, which is one of my favorites. Any suggestions on rock fish prep would be great for this 'ol Gulf of Mexico boy. Also, these inlets are a pain in the ass (Oregan inlet), even on a good day!!! Cook them rockfish the same as redfish

Rockfish is indeed Striped Bass, they should be almost gone from NC by now and headed up my way (New Jersey) and I can't wait to catch a few, hopefully this weekend.
