OT Mmmmm, pig parts

When we moved the mom-in-law from Rockford to here in Urbana three
years ago the wife sent postcards to all the relatives telling them
of the move. This resulted in a three year correspondence between my
86 year old mom-in-law and her 94 year old cousin in Kenosha, WI.

So this weekend the vegetarian wife is driving four generations worth
of O'Leary women, (none of whom are currently named O'Leary, ah
patriarchy ;-), to Kenosha and me and the hound are home alone.

I alerted the Amish organic meat guy at our local Saturday morning
Farmer's Market several weeks ago, and this morning I picked up a
gorgeous chunk of guanciale.

Put it in the skillet with a little bit of butter til it started
to render, tossed in a chopped onion and cooked til dark brown,
then deglazed it with a little Pinot Grigio til it turned syrupy.
Meanwhile I'd cooked some pasta and in a big bowl mixed a raw egg
with some Pecorino Romana, Parmesano Reggiano and salt & pepper.
Tossed the steaming hot pasta into the bowl with the egg & cheese,
add the pork jowls and onions and serve.

Bacon & eggs over pasta. Gawd, it's good to be a bachelor every now
and then. ;-)

More cholestrol on tap this evening. ;-)

It's very much like bacon, but it's cured hog jowl instead
of smoked pork belly. It is hard to find, that's why I had
to order it from a boutique butcher several weeks in advance.

Some men do not want their wives to know that it's possible to survive
without them. Whether this is true of Ken, he'll be able to say. For
the ones it may be true of, some don't want to hurt the little woman's
delicate feelings and some (pardon my cynicism) don't want to be given
an extra chore when / if she finds out. BTW, some women _do_ have
delicate feelings about 'woman's work' and don't want to think men can
or will do it. I have found both tendencies to be greater in men and
women born before 1955, but am often surprized to find them in younger
ones.

Steve, I think you are takin' this **** just a bit too seriously, if not too
literally as well. However, I doubt that even *you* do as you damn well
please, without consideration of your wife's feelings/concerns (you are
still married, right?).

Nothing like that at all. I do most of the cooking for the two of us
and naturally I cook the things that both of us like. When Kristine
goes out of town I have an opportunity to cook the things I like
but she doesn't. Pasta Carbonara causes Kristine to retch, but I
love it, so yesterday I made a big Broadway production out of a big
bowl of Pasta Carbonara.

Simple, eh ? So simple even a putz could understand,(not you cyli,
the Putz Barnard).
