I'm looking for a custom fish filet knife for a gift, something unique and
not anything one could purchase off the shelf.

My own Sami knife from northern sweden is a real eye-opener, and its one of
a kind. Google 'sami knives sweden' to get hits such as this:

or contact Roger here on ROFF for a source of excellent knives.

Mine wasn't cheap, but it was worth it.

I live next door (almost) two two guys that are amazing. The one guy is
a World champion utility knife maker, the other Swedish champion
utility knife maker.
They both do fillet knifes. One of those guys is, for obvious reasons,
way more expensive to buy from than the other. To be honest Roger
Berghs knives are way way out of my league

They both have web pages, but the guy recently Swedish champion, Carl
Michael, knows very little about web building so his page is a bit
rough.

Whatever you get make sure it has a guard or a raised section between
the handle and blade so the hand can't slip forward on the blade.
Years ago while attending the annual Memorial Day Idiots Gathering at
the local emergency room guys were comparing injuries (I'd run my
finger through a sprocket and chain on a big mower) and the story that
got the most spine shivers and the biggest groan out of attendees was
from a fellow who after a long day on the water had just completed
cleaning a mess of fish and stabbed his fillet knife in his cleaning
board. It had no guard and his hand went right down over the blade
inflicting a really, really nasty slice across his hand. Not pretty to
look at. Fortunately he could still wiggle everything so it didn't do
any lasting damage.
That doomed my favorite fillet knife, tapered, beautiful and without a
guard.

True, but they're also utility knives. I wear mine in my fishing vest and
use it all the time. Granted, I deliberately chose one of the simpler
designs, but its a real treat when folks look at it and say 'whoa, where did
you get THAT?' :-)

A utility knife is something that by definition is useful. No doubt
those knives could be useful, but you'd have to be nuts to actually use
them. It would be like hanging an original van Gogh in a Holiday Inn
motel room.

A utility knife, to me, is a knife that I can buy somewhere like REI or
Bass Pro or Cabelas. It's a good knife with a sharp and durable blade.
It may be fairly expensive, like around $60. If I lose it, no big deal.
I buy another one.

Those knives aren't like that. If I lost a custom-made knife (or dagger
or sword or tomahawk) by Roger Bergh I'd be devastated. Utility knives,
my ass. They sure are gorgeous, though.

True, there are quite a few knives there that I could only imagine an
afficianado having in his display case. But Carl Michael also makes some
lower-end knives that are very stylish and have an excellent blade. I can't
post on abpf, but if someone is willing to post it for me, I'll send a pic.

If you get up to one of the Swedish claves, you'll be astounded at the
selection of handmade, unique, collector's item knives those guys carry. Its
sort of a trademark thing.....you'll be sitting around the fire, and someone
will pull out a knife to slice a piece of pepperoni or something, and the
furriners will all gasp and someone will say 'whoa, nice knife!' Then
everyone will start pulling these museum pieces out of their vests and
pockets and nonchalantly show them around. Pretty much everyone carries a
Van Gogh.
