Default Shark fishing - Destin

I'll be vacationing in Destin in a few weeks and have this (stupid, I'm sure)
idea of chartering a boat to fish for shark, or other impressive mountable sea
creature. I've never fished for anything larger than bass before and will have
less than a full day to indulge this fantasy. I would appreciate any
information/advice from how to pick a reputable charter service to whether the
Destin area offers this kind of fishing. I'm afraid that I might be dreaming of
a multi-day, deep sea expedition which I just can't schedule, and if so I guess
I need to be told so.

Most "sea" creatures are really not easily mountable,, at least that's
what I've been told,, what you see on walls, are reproductions

I'm not sure about Destin,, but I believe that getting a charter, for an
afternoon shark fishing should be a snap,, it is at Orange Beach,, Many
HUGE sharks hang close to the shore, you don't need a multi day trip.
Expect to do a lot of catch and release,, They changed our limits on
sharks over in Ala, to just two,, we keep them, because we eat them, not
to have them mounted

Destin, Florida.
Up on the panhandle on the Gulf of Mexico, right next door to Fort Walton
Beach which puts it about half way between Pensacola and Panama City.
