Default White Catfish

I caught a White Catfish. Actually I could probably catch
a whole bunch of them if I targeted them.
Just for kicks, I filleted it and cooked it up using cajun seasoning. The
flesh looked good, firm and white.
But the taste was kind of bland. Not bad, not muddy,
just not as tasty as farm raised Channel Cat. Yet, every site I've seen
talks of the White Cat as a prized food fish.
Has anyone else every tried this catfish?

Default White Catfish

When I stock channel cats in the ponds on my farm the hatchery adds one
white ( albino) channel cat with each 100 as a counter. I've caught these
when they were big enough & they tasted the same as a "regular" channel cat
caught the same day.

I like White cats that are less than 1 pound. Above that they just do not
seem that good. The Sacramento Delta has millions of them. Is the
predominent species. Maybe 8-10" size.
