Wolfie started this. And although albacore are hook and line caught, most
are NOT caught with a fly rod g. Albacore Oatmeal Cookies Mix until creamy 1 cup softened margarine 1 cup granulated sugar 1 cup dark brown sugar 2 eggs 1 teaspoon vanilla 1 6 oz. Albacore tuna in water well drained and separated Add: 1 teaspoon soda 1/2 teaspoon salt 2 1/2 cups flour 3 cups oatmeal 1 cup chopped nuts - peanuts, walnuts or pecans Place 1 inch balls of cookie dough on cookie sheet that has been lightly sprayed with PAM. Place the dough about 3 inches apart. Flatten with a teaspoon. When cooked drizzle with lemon icing. Icing: In a small sauce pan melt 2 tablespoons of margarine. Add 2 tablespoons of concentrated lemon juice. Mix in 1 1/2 cup powdered sugar until all ingredients are well blended. Spread the icing on each cookie and watch them disappear. Your friends will not believe you, if and when, you tell them what's in the cookies. They're good and the albacore is hard for some people to recognize. Caution - refrigerate uneaten cookies!
