Florida Everglades fly anglers like Chico Fernandez, Flip Pallot and other
like a 16 foot "tumblehome" or "cottage" style canoe for fly fishing. They are about 36 inches wide with a flat bottom and a keel for flat water. If they are in less than 4 feet of water they can stand and poll themselves along with a 12 foot poll. I just came across the Old Town Osprey Angler 155 canoe. It's Royalex (heavier at 68 pounds) but it sure looks like a stable canoe. It even comes with oar locks in case you'd use them, and anchors.
