Just moved to the outer banks, NC. Not familiar with rockfish, but it seems to be a local favorite and are fun to catch. I've been throwing them back, but any suggestions on cooking them?
I still can't understand why Amberjack is still not a big hit on the east coast, unlike the Gulf. But, I still have Mahi Mahi, which is one of my favorites. Any suggestions on rock fish prep would be great for this 'ol Gulf of Mexico boy. Also, these inlets are a pain in the ass (Oregan inlet), even on a good day!!!
